Zucchini overnight oats are one of my favourite ways to sneak extra nourishment into the start of the day, especially after a night shift. With a little added protein, this breakfast will keep you satisfied and help regulate your blood sugar levels, reducing your cravings for sweets.

Zucchini blends seamlessly into the oats, adding a light, fluffy texture without altering the flavour — making it a perfect way to enjoy an extra serving of vegetables and fibre.

You can customize this recipe to suit your taste by adding your favourite toppings — think nut butter, cinnamon, seeds, or a handful of berries for natural sweetness. It’s simple, wholesome, and a gentle reminder that small, mindful choices can create significant shifts in how you feel each day.

Try making this after your shift, and you’ll wake up to a delicious, ready-to-go breakfast that feels like a treat waiting for you in the fridge!

Ingredients

Add

0.5  1 cup Pure Almond Milk - Unsweetened Original (Silk)

0.25  cup Coconut Milk (from a can)

1  scoop Protein Powder - Vanilla

0.5  cup Rolled Oats Gluten Free

0.25  cup, grated Zucchini

1  tbsp Maple Syrup

2 tbsp Organic Ground Flaxseed

1  tsp Vanilla Extract

0.5  tsp Cinnamon

Directions

Add

  1. Add ingredients to a mason jar or small container and stir well to combine.

  2. Cover and refrigerate overnight.
