Mediterranean Chickpea Salad for Busy Hospitality Professionals

Ingredients

Servings 01

1 cup [250 g] Chickpeas (canned and drained)

0.5 cup [52 g] Cucumber (Chopped)

0.25 cup [37.25 g] Cherry Tomatoes (Halved)

1 tbsp [14 g] Olive Oil

2 tsp [9.4 g] Lemon Juice

0.25 tsp, dried leaves [0.25 g] Oregano

1 dash [0.63 ml] Kosher Salt

1 dash [0.63 ml] Black Pepper

2 tbsp (packed) [30 g] Feta Cheese (Crumbled)

1 tbsp [10 g] Hemp Seeds

Directions

01. In a bowl, combine the chickpeas, cucumber, and cherry tomatoes.

02. Drizzle with olive oil and lemon juice.

03. Add oregano, salt, and black pepper, then toss to coat evenly.

04. Gently fold in the feta just before serving and sprinkle hemp seeds on top.

05. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.
