High Protein Tahini Cinnamon Apple Breakfast

This High-Protein Tahini Cinnamon Apple Breakfast combines creamy tahini, sweet cinnamon apples, and a protein boost.

Adding cinnamon to any meal may support balanced blood sugar and reduce sweet cravings, thanks to compounds that interact with insulin receptors and may help move glucose into cells.

Tahini can support digestion because of its natural fibre content, which may help you feel fuller for longer.

Ingredients

(Servings 01)

4 tbsp, dry [44 g] Quinoa

1 cup [240 ml] Coconut Milk Unsweetened

2 tsp [10 g] Maple Syrup

1/2 medium [90 g] Apples (Diced)

1/2 tsp [1.15 g] Cinnamon

1 pinch [0.32 ml] Kosher Salt

1/2 cup [113.5 g] Whole Milk Greek Yogurt Plain

1 tbsp [15 g] Tahini (For drizzling)

1 tbsp [20 g] Maple Syrup

Directions

01. Cook the quinoa according to the package directions. Once cooked, set aside.

02. In a small saucepan, combine the coconut milk, maple syrup, diced apple, cinnamon and a pinch of salt. Warm over medium heat for 3–4 minutes, stirring occasionally, until the apple begins to soften.

03. Stir the cooked quinoa into the warm apple mixture and continue cooking for 1–2 minutes, allowing the flavours to combine.

04. In a small bowl, whisk together the tahini and maple syrup until smooth. If the mixture is too thick, add a small splash of coconut milk to reach a drizzleable consistency.

05. Transfer the quinoa mixture to a bowl. Top with Greek yogurt and drizzle with the tahini maple sauce. Serve warm.
